		<description>Jane: if you try it, my advice is there&#039;s no need to dump 1/2 cup of olive oil -- olive oil! -- into the water you poach the spelt berries in. That seemed unnecessary and kind of extravagant. 

Also, think about this approach: risotto is all about base recipe + add-ins. So, why not make the base risotto recipe using arborio, and at the appropriate time stir in some pre-cooked spelt berries. You could make spelt-kale risotto, spelt-chicken risotto, spelt-tomato-herb risotto, spelt-rapini-sausage risotto... the possibilities are pretty much endless. And, when you make one, let me know so I can come over and have some!</description>

		<description>Yum! I&#039;m also a big fan of the spelt berries from McCarren Farmers Market--and this is one I&#039;ll have to try. I did just lay in a bag of arborio though...nothing beats a rib-sticking real risotto. Glad to have you back in town!</description>
