1 to 2 tbl oil
1 medium onion, chopped
1 or 2 cloves garlic, minced
1 heaping tsp good quality curry powder
1 tomato, coarsely chopped
1 can chickpeas, drained, or 2/3 cup dried chickpeas, soaked, cooked and drained.
1/4 to 1/2 cup chopped cilantro
salt and pepper to taste
Cook onion in oil until translucent. Add garlic and cook until soft. Add curry powder and cook, stirring until spice is toasted and onion and garlic are thoroughly coated.
Add tomatoes and stir until warmed through and starting to soften. Add chickpeas. Lower heat and cover pan, and cook until tomatoes break down and mixture develops a stewy consistency (adding water, stock and / or tomato juice if necessary). Add cilantro, salt and pepper. Adjust seasonings and serve.
