Cucumber Raita

1 cucumber
1 cup plain yogurt
1 tsp cumin
3 to 4 tbl chopped cilantro
salt and pepper

Peel the cucumber and cut off the ends. Slice lengthwise into quarters. With a sharp-edged spoon, scoop out the seeds, leaving only the firm white flesh. Chop finely or grate.

Combine cucumber with remaining ingredients, adjusting spices to taste. Refrigerate for at least 1 hour. Remove from fridge 1/2 hour before serving.
